For our first cookery of the New Year we jointed a chicken and then used the whole bird to make a vat of coconut chicken curry. We shouldn't need to cook again this year!
To round off our cooking for the year Gemma helped us to make Christmas Cookies, which were then seriously over-decorated.
We had a lovely Christmas Mass in Sonas. Thanks to all who came including Father Heinhold and Santa!
Actually we used a butternut squash. We made a sweet shortcrust dough with eggs, butter and flour. The next day we prepared the squash and mixed it with sugar, salt, milk, eggs, butter, cinnamon and nutmeg. we rolled out the pastry, blind baked it and poured in the squash mixture. It took a long time to cook and we left it in the fridge overnight. The next day (Thanksgiving Day), we ate it with rum (flavoured) ice-cream. Happy Thanksgiving y'all!
Curries from across the globe. The West Indian lamb was a slow cook, we started on Tuesday morning and only ate it Wednesday lunch time. Perfect with spicy Bombay Potatoes.
